Our History
Vaquero Cellars is Jim and Elaine Pollard’s long time vision and today is a family-owned and operated winery dedicated to the creation of high end premium crafted wines.
We originally envisioned planting a vineyard on our property, but came to realize the central coast is already producing some of the finest fruit on the world market.
We knew, and are now positive that great wine is attributed to great grapes and a masterful winemaker. We approached Jim Porter who is well known and respected on the Central Coast as a connoisseur winemaker. He is now our partner and winemaker. Jim also has his own William James Cellars label with production topping off at 4000 cases per year. Jim and Robin Porter can be visited at William James Cellars.
Vaquero Cellars Syrah is a blend of three vineyards in Santa Barbara County.
70% Hampton Family Vineyard’s in Santa Ynez
20% Premiere Coastal Vineyards in Los Alamos and
10% Los Alamos Vineyard in Los Alamos.
This garnet beauty has a rich full body with ripe aromas of blackberry, with a hint of vanilla. The fruit is fermented in open top 10 ton fermentors, and aged in 1/3 new oak barrels.

The wine has an awesome color, very easy drinking with ripe fruit aromas and flavors.
