VC Wine of the Month!
2006 Merlot Santa Ynez Valley

The grapes were harvested on September 26, 2006 and yielded 4.6 tons per acres from Harmon Vineyards Santa Ynez Valley. The grape clusters were gracious and produced 150 gallons of grape juice per ton, providing plenty of concentrated flavors in the finished wine.

We crushed and destemmed the grapes into open top 1- 1/2 ton fomenters. After the must warmed to 52 degrees F the bin was inoculated with BDX cultured yeast. BDX is used to optimize color and structure with soft tannin extraction and increased mouth feel. Lower fermentation temperature contributes to varietal fruit character and enhanced complexity. Primary fermentation lasted eleven days then we pressed the must into 500 gallon tanks. The wine settled for two days before racking into barrels. The wine was inoculated with OENOS cultures to start the secondary malolactic fermentation. We used 40% new French oak barrels and 60% Neutral barrels. The wine aged in barrels for 22 months.

This excellent full bodied wine is100% Merlot. Crisp and nicely focused, plum aroma’s and hints of cherry and underbrush favors that finish with firm tannins. An excellent choice. 400 cases produced.

VC’s 2009 Bottling is Complete
We're not sure where 2009 has gone. It ' s been busy and fun. We have completed our 2008 bottling. This year we are introducing a new Pinot Noir and Chardonnay. Both varietals are from Santa Barbara County. Our release date is February 2010. We plan to ship these to releases to our club members in April. What better time to sign up and make sure you get your share? We will keep you updated.

THE BOTTLE OF WINE
For all of us who are married, were married, wish you were married, or wish you weren't married, this is something to smile about the next time you see a bottle of wine.

Mary was driving home from one of her business trips in Northern Arizona when she saw an elderly Navajo woman walking on the side of the road. As the trip was a long and quiet one, she stopped the car and asked the Navajo woman if she would like a ride.

With a silent nod of thanks, the woman got into the car.

Resuming the journey, Mary tried in vain to make a bit of small talk with the Navajo woman. The old woman just sat silently, looking intently at everything she saw, studying every little detail, until she noticed a brown bag on the seat next to Mary.

"What in bag?" asked the old woman.

Mary looked down at the brown bag and said, "It's a bottle of wine. I got it for my husband."

Wine Tasting - The Sense of Smell
There are a few very important things to note when we "nose" a wine. It is suggested to first smell the wine before swirling, noticing the delicate aromas. Next, swirl the wine and smell again after it is at rest. Depending on the bouquet, you may then notice a profound difference in the odors emerging. Aroma is a smell that originates from the actual grape, with very clear cut characteristics. Aroma is most prevalent in young wines. The bouquet of a wine refers to smells generated as a result of aging; smells found particularly in mature wines that were aged in a bottle. The bouquet generally has much softer and complex characteristics than aromas. Identifying what you smell is usually the most challenging part in wine tasting. Although there are many smell categories used to describe characteristics of wine, none have been exclusively agreed upon.

VC Wine of the Month!
2006 Sangiovese, Santa Ynez Valley

The grapes were harvested on October 19, 2006 from Camp 4 Vineyard, yielding 4.0 tons per acre. The grape clusters were gracious and produced 155 gallons of juice per ton, providing plenty of concentrated flavors in the finished wine.

We crushed and destemmed the grapes into open top 1-1/2 ton fermenters. After the must warmed to 52 degrees F, the bins were inoculated with Syrah cultured yeast. This strain is specific for its use in Sangiovese to enhance the spice, fruit flavors and aromas of the grapes. Primary fermentation lasted eight days when we pressed the must into 500 gallon tanks. The wine settled for two days before racking into barrels. We used 20% new French, 10% European oak, and 60% neutral barrels. The wine was inoculated with OENOS cultures to start the secondary malolactic fermentation. The wine aged in barrels for 10 months.

This Sangiovese has flavors of blackberry, raspberry and vanilla with leather and spice aromas. It is like soft velvet in your mouth, with a hint of tea leaves in the finish. This was a great year with spectacular fruit, and has produced an excellent wine.

Gal’s Night Out

POSTNET Hosts - Another successful Gals Night Out with the pairing of Testa’s Bistro, Stinn Jewelry and of course VAQUERO CELLARS amazing wine. Every so often the girls at POSTNET plan, organize and execute an amazing networking event for gals in business. It’s an event created to network women dedicated to growing their business and are striving to achieve SMART goals. Many women are not as outspoken as they would like, and a venue such as this makes it easier to mingle chat and share business stories and ideas. Each event has proven successful by the number of business connections made at the event and the number of new relationships developed long after the event. The most common comment and question asked of Pam and Rebecca (Owners of PostNet) “Thank you for inviting me and When and where is the next event?” Each event is unique and different from the last. The entire concept started about 2 years ago with Pam and Rebecca inviting about 10 business gals to their house to share some food and wine. This is our 5th event and now to over 50 gals and the location has moved to various locations.

California’s Grape Crush Down 6%
The 2008 grape crush is down 6% from the 2007 crush. The growing season was affected by below normal winter rains, April frosts, followed by a mild summer and fall temperatures. However, although the yields were lighter, they resulted in excellent quality fruit.

The economy is in a period of poor performance, things are discouraging, and if anyone should have a positive attitude it is now. Discouraging attitudes make us just that much more miserable. A glass of Vaquero Cellars wine can change your entire attitude. Don’t be disappointed, be positive. Things will change to the better, but we just can’t tell you when. We can tell you that a glass of VC will get rid of a lot of depression.

VC Wine of the Month!
2005 SYRAH, SANTA BARBARA COUNTY. The grapes were harvested on September 27, 2005 from Hampton Family Vineyards and October 17, 2005 from Premiere Coastal Vineyards, and Los Alamos Vineyards, yielding 4.0 tons per acre. The grape clusters were gracious and produced 155 gallons of juice per ton, providing plenty of concentrated flavors in the finished wine.

This is 100% Syrah. 70% Hampton Family Vineyards in Santa Ynez; 20% Premiere Coastal Vineyards in Los Alamos; and 10% Los Alamos Vineyards in Los Alamos. Full bodied and rich with and awesome color, very easy drinking with ripe fruit aromas and flavors, and a mouthful of sweet plums. A fantastic food friendly beauty.

VC Wine of the Month! 2007 Chardonnay Santa Barbara County. The grapes were harvested on October 16, 2007 and yielded 5.0 tons per acre. The grape clusters were gracious and produced 155 gallons of juice per ton, providing plenty of concentrated flavors in the completed wine. Chardonnay is becoming America’s Favorite Varietal. This wine has outstanding depth and balance. Very delicious, with taste of apple, fig and pear backed by thoughtful toast. This is a Chardonnay charm.


November 2008

The wine harvest season is over and there was a much lighter crop this year. On the brighter side for the grower's the fruit is high quality, and prices are up. There is a very strong demand for this years harvest.

With harvest just around the corner - purple hands, and quite frankly purple everything are commonplace for our winemaker, Jim Porter. He’s excited and gearing up to bring you new releases of our varietals with his classical professionalism!

It's been busy and fun. We bottled our first Chardonnay in April . This month we bottled a 2006 Santa Barbara County Merlot, a 2007 Santa Barbara County Pinot Noir, a 2007 Sierra Madre Farms Pinot Noir, a 2007 Santa Barbara County Syrah, and a 2007 Syrah Stolpman Vineyard. We have completed personalized labeling for several clients, and it has been well received . We are leaving a selected amount of wine from each bottling for selected personal labeling by you and your business . We had a very insubstantial rainfall in 2007, better known as a drought, and the grape harvest came in very light from a crop load standpoint. The weather helped in the growing season and allowed for great ripening. The flavors of fruit we purchased are outstanding.

With the above average rainfall we have had this season; it looks very promising for the 2008 harvest. The early rains energize the vines and root growth.

Our current wine list is truly exceptional. We will introduce white and 2 more red varietals in the early fall of 2008.

Welcome to Vaquero Cellars. This is our first news letter to our many friends.

The Vaquero Cellars label was inspired because of the history and Spanish legacy of Santa Barbara and San Luis Obispo Counties. Our current production has been raised to 2000 cases with 5 excellent varietals. Our first wine was a 2005 Syrah which is one of the rising stars of California. We now have 5 different varietals, and will introduce 3 more in 2008. We now include the 2005 Syrah; 2005 Cabernet Franc; 2006 Pinot; 2006 Sangiovese; and a 2006 Syrah Stolpman Vineyard.

Great wine is attributed to great grapes and a masterful winemaker. Jim Porter who is well known and respected on the Central Coast as a connoisseur of wines is our winemaker. The Central Coast of California is producing some the finest fruit on the world market, and we only purchase our grapes from the best respected vineyards in our area. Our wines reflect an attentive selection of vineyards and appellation, enabling us to showcase authentic fruit flavors with finesse and complexity. We are dedicated to the creation of high end premium crafted wines.
